This is a great soup for a cold winter day. It is as simple to prepare as it is delicious.
Ingredients
- 1 tablespoon olive oil
- 1 1/2 cups chopped celery
- 1 cup chopped carrots
- 1/2 yellow onion, chopped
- 1/4 cup fresh basil leaves
- 1 teaspoon chopped garlic
- 1 cup soy milk
- 1 medium tomato, chopped
- 3/4 cup tomato sauce
- 1 teaspoon sea salt
- 1/2 cup cashews
Directions
- Heat the oil in a large saucepan on medium heat. Add the celery, carrots, onion, basil, and garlic. Cook for about 10 minutes, stirring frequently, or until the onion is soft and translucent. Stir in the soy milk, tomato, tomato sauce, and salt.
- Bring to a boil over medium heat.
- Immediately transfer the mixture to a blender. Add the cashews. Process on high speed for 2 minutes, or until smooth and creamy, stopping occasionally to scrape down the blender jar.
