I’ve been asked to do a bunch of cooking demonstrations lately and although they are a lot of work I really enjoy teaching people how to make my raw food. Lately, my go-to demo recipe is making a gorgeous raw fruit cake which I used to make my kids for birthday cakes when they were younger. This cake is delicious to look at and eat and is sure to be a hit for raw foodists and Standard American Dieters alike!
I did a cooking demonstration at Whole Foods in the South Loop of Chicago and in addition to other recipes I demoed this yummy cake which was a crowd pleaser. This easy recipe is one that I could literally make in 15 minutes. It only uses the most natural products with no refined sugars or flour.

Decorate with any of your favorite fruits
Raw Fruit Cake:
Cake
- 4 cups almonds
- 3 cups dates
- 1 cup raisins
- 1 tablespoon flax oil
- salt to taste
- 2 cups almonds (in separate container than other almonds)
Frosting
- 3 cups soaked macadamias
- 1/2 cup lemon juice
- 1 tablespoon vanilla extract
- 1 1/2 cups honey
- 1 tablespoon flax oil
- 1 cup soaked almonds
- Salt to taste
Directions
- To make cake-blend 4 cups almonds in a food processor until powderlike. Add 3 cups dates, 1 cup raisins, 1 tablespoon flax oil and salt to taste. Blend. The mixture will form a dough ball once it is mixed well.
- Finely chop 2 cups almonds to make crumble to spread on a plate. Take half the dough and make a flattened circular layer for the bottom of the cake.
- To make frosting-take 3 cups soaked macadamias, 1/2 cup lemon juice, 1 tablespoon vanilla extract, 1 1/2 cups honey, 1 tablespoon flax oil, and 1 cup soaked almonds and blend. Salt to taste.
- Cover cake with frosting and add second layer of cake. Frost then add sliced almonds. Decorate with fruit.
